
Why am I looking for something to replace the real thing, you might ask? Well for one, I'm dairy-free these days so any food that resembles anything creamy is an automatic plus. A few years ago I ran across a recipe for Butternut Squash Lasagna, which I must say, is one of my all-time favorite dishes. Last fall when we were celebrating my husband's 30th birthday, we had this amazing Butternut Squash Ravioli at a restaurant that resembled the lasagna, only it was cuter. My sister-in-law has been craving it ever since and came up with dish above when we were both given some butternut squash a few weeks ago. I think she baked the squash and pureed it with some butter and poured it over the noodles (correct me in the comment section if I'm wrong, Mary). I couldn't remember what she'd done so I started the same way, except I added a little goat's milk to the puree and a few fresh basil leaves and kosher salt. I made my favorite macaroni and cheese recipe for the rest of the family and served this to myself. I had to hold back and not eat the entire dish in one sitting. It's that good (especially for this cheese deprived girl) AND it looks the part. So if you are looking for a dairy free option, or just trying to get your kids (or yourself) to eat more veggies, try it out. But make a lot...

did you know that butternut squash "mac-n-cheese" is all the rage right now? see? you're even, in your own way, ahead of the times--i mean, 'cause, you apparently didn't know this. i'll bet you're so proud of yourself right now. ;) seriously, though, i'm so glad you enjoyed it! to me, butternut squash is good on and/or in anything!!!
Hmmm, that looks fun. I made a butternut squash soup from one of Ina Garten's cookbooks and I've been craving it all week. It is basically pureed butternut squash with chicken stock. I made it for me and Jones for lunch and we longed for the leftovers, but I won't say who snatched them from whose nose and to it to work with him.
This looks delicious! I'm not trying to be dairy-free, but I AM trying to be good about what I eat...definitely will have to give this a try.
I'm glad you posted this since I'm not sure how soon I will be blessed with more butternut squash. Yes, it started out with just me, a butternut squash and some butter and salt. Of course you being the more advanced cook (and yes, she really really is..I am not much of a cook) added so many more delightful things. Anyway, I am interested to hear how W liked it since I haven't tried it on B yet. oh, and I had no idea this was a trend. Hmm, maybe I'm not as creative as I thought :-(
Fun fall idea, its been raining here all week so I'm making pumpkin bread to go with our quiche tonight and last Sunday we had our first pumpkin pie of the season. I haven't tried any other squash dishes yet but now I think I'll have to.....wish butternut (my fav squash) was easier to cut up....
