Have yourself some rich, sugar-free hot chocolate. Here's the basic recipe I use per cup of milk:
1 Tablespoon cocoa powder
1 Tablespoon honey
1 tiny scoop stevia (ours comes with a miniscule scoop...it's about a pinch)
dash of salt
dash of vanilla for the whole pot
dash of cinnamon, or a cinnamon stick
1 cup of milk...raw milk, goat's milk, coconut milk...it all works
Put all ingredients EXCEPT milk in a medium pan and heat to warm the honey. Wisk together, and slowly add milk so your cocoa powder doesn't get clumpy. Add the rest of the milk and wisk until everything is mixed and hot. So easy, and I love having "treats" to give my kids that are 100% good for them. My brother, Winston, is staying with us right now, and he couldn't even tell the difference.
I'm off sugar for now, so I don't mind the treat, either. It was the perfect accompaniment to yesterday's gingersnap cookies. Sigh, I love everything about this time of year.

and why haven't i thought to use honey as a hot cocoa sweetener???
i think i'm about to invest in valrhona cocoa. i was a bit skeptical that it could make that big of a difference, but oh my. so very good.
